Bryggen Royale Casino Hotel is a fictional destination built into an old Hanseatic trading wharf—a tight row of tall wooden warehouses in ox-blood red, ochre and mustard, leaning together over the harbour, their narrow passages and creaking galleries little changed since the German merchants traded dried fish here six centuries ago. Warm ochre, harbour teal, dried-cod gold and dark tar timber run through the whole casino hotel.

Our signature restaurant sits right on the harbour quay, where the trading boats once landed—cod and the famous stockfish the wharf was built on, halibut, king crab, fish soup, and cloudberries and rye from the mainland. Aquavit is poured ice-cold, the boats pass below the windows, and the room opens onto the casino hotel cellars a few steps away.
